  • 6 tablespoons (3/4 stick) unsalted butter
  • ½ cup honey
  • 2 teaspoons mild wet jerk seasoning
  • 1 (13-ounce) bag salted kettle-cooked potato chips
  • 1 lime, juiced, for finishing

Preparation

  1. In a large saucepan over low heat, melt the butter. Add the honey and stir occasionally until fully combined and beginning to bubble, 1 to 2 minutes.
  2. Add the wet jerk seasoning to the butter and honey mixture. Stir constantly until fully combined and smooth, about 1 minute. Let the glaze bubble for 1 full minute, stirring occasionally, until fragrant and glossy. Watch closely and do not let it burn.
  3. Turn off the heat. Add the entire bag of kettle-cooked potato chips to the saucepan. Using a large spoon or spatula, toss gently but thoroughly until every chip is fully coated in the honey jerk butter glaze.
  4. Transfer the coated chips to a large serving bowl or plate. Finish with a squeeze of fresh lime juice over the top. Serve immediately while warm.
