Cast-Iron Cheesy Baked Meatballs

Ingredients

for 8 servings

Meatballs:

  • 1 ½ lb ground beef (600 g), or veal
  • ½ red onion
  • ½ cup breadcrumb (55 g)
  • fresh parsley
  • salt and pepper, to taste
  • 1 egg
  • 1 clove garlic, minced
  • 2 tablespoons olive oil

Marinara sauce and topping:

  • 2 tomatoes, diced
  • 1 cup tomato paste (260 g)
  • ½ onion, chopped
  • italian seasoning
  • 1 cup shredded cheese (100 g), (mozzarella or cheddar)

Preparation

  1. Preheat the oven to 400°F.
  2. Chop red onion, garlic, and parsley. Mix the ground meat, egg, breadcrumbs, red onion, garlic, and parsley. Shape into balls (around the size of a golf ball).
  3. Heat olive oil on a cast-iron pan. Add meatballs and leave them on until they get crispy and brown on the outside. They do not have to be fully-cooked as they will bake in the oven.
  4. For the marinara sauce, add onions to the pot. Once translucent, add tomatoes.
  5. Add tomato paste and simmer for 10 minutes. Then, add Italian seasoning.
  6. Transfer the sauce into the cast-iron pan. Nestle the meatballs in the sauce and sprinkle the cheese over the meatballs.
  7. Bake for twenty minutes.
  8. Sprinkle with chopped parsley if desired.
